Sandwich holography is proposed for simultaneous temperature mapping and heat transfer coefficient measurement. The latter task requires the knowledge of the temperature gradient. The remarkable feature of the proposed method is that the temperature gradient is obtained avoiding numerical differentiation, which adds errors to the measured data, as well as phase extraction and phase unwrapping procedures. Theory and experimental results are given.
