Growing up woth many more numbers year after, the European Community is developing a new sense of feeling towards the problem of good safety and quality. Consumers are growing in number and needing, always looking for more information about what are they really having served on their table and where all those goos come from. In this evolving situation, the intent of the present work will be to analyse new approaches towards consumenrs' potection, especially studing all that could concern about "traceability" and newsafety instruments to manage quality and food safety, all over the Community area.
