The use of new technologies is taking on an increasingly decisive role in ensuring food security. Indeed, it is si-gnificantly affecting the dynamics of the agrifood market, in which companies involved are called upon to siste-matically compete among themselves in terms of production of quality agrifood goods that are healthy and safe for consumers. In order to ensure a greater food welfare, as well as a higher level of product safety and quality, the use of certain technologies, such as artificial intelligence (AI) systems, blockchain, Internet of Things (IoT), mobile apps, and Cloud, assumes a key role within the agribusiness management system. In the agrifood sector, the above mentioned means prove to be strategic for two main reasons: firstly, they foster both the disinterme-diation of transactions and a greater transparency in the relationships between the parties involved; secondly, they promote a dynamic and pro-competitive traceability of the products, so to benefit both the operators invol-ved in the production and distribution chain and consumers-final customers.
L’utilizzo delle nuove tecnologie assume un ruolo sempre più determinante per garantire la sicurezza alimentare, incidendo in maniera significativa sulle dinamiche del mercato dell’agrifood, nel quale le imprese coinvolte sono chiamate ad un continuo confronto sul piano della produzione di beni agroalimentari di qualità, sani e sicuri per i consumatori. Al fine di assicurare un maggiore benessere alimentare, così come un più elevato livello di sicurez-za e qualità dei prodotti, un ruolo centrale nell’ambito del sistema di gestione agrifood assume l’impiego di alcu-ne tecnologie: sistemi di intelligenza artificiale (IA), blockchain, Internet of Things (IoT), app. mobile, cloud. Nel settore agroalimentare, queste ultime si rivelano strategiche, non solo per favorire la disintermediazione delle transazioni e una maggiore trasparenza nei rapporti tra le parti coinvolte, ma anche per promuovere una traccia-bilità dinamica pro-competitiva a vantaggio tanto degli operatori coinvolti nella catena di produzione e distribu-zione (supply chain) quanto dei consumatori-clienti finali.
