In anni recenti, il mercato dei prodotti agroalimentari tipici (TFP - Typical Food Products) è stato caratterizzato da cambiamenti che hanno dato luogo all'affermarsi di nuovi paradigmi di consumo e di offerta. L'obiettivo di questo articolo consiste nell'analizzare la natura di questi cambiamenti e le implicazioni che ne derivano in termini di strategie di marketing. Il caso Slow Food viene presentato come esempio di questo processo di modernizzazione. Lo studio è teso a individuare un modello interpretativo del business dei TFP per comprendere le rinnovate dinamiche che caratterizzano sia il lato della domanda che il lato dell'offerta. -

Abstract
